Apple Butter-Crisp-Rings

I made a couple of pint jars of apple butter from a recipe out of the cookbook, Just a Matter of Thyme. There was a recipe for an apple crisp but I had ran out of flour and butter. So my substitutes were olive oil and homeade oatmeal cookies. I added I think it was a 1/4 c sugar, a few shakes of cinnamon and lemon juice from a half lemon to the apples. I crumbled two or three oatmeal cookies over the apples and mixed it up as my substitute for flour, then I crum-
bled some oatmeal cookies into a separate bowl added a little sugar, a little olive oil and mixed it up and added it on top of the apples that I had in a baking dish. Than I baked it. Yummy! I got the dried apple recipe from the book, {Possum Living}. {Thistles}

It sounds yummy to me ! I've made something like that before with crumbled oatmeal cookies , applesauce and some cinnamon , topped it with a little cool whip. It's interesting to experiment with what you have on hand.
