Eating Thistles

{Plain Old Kristi} made a blog entry about Eating Thistles. I also thought you could eat the inside of the buds. I picked a Bull Thistle and looked up different info and what was written about it was that the inside of the buds taste like articokes. I cooked the one I picked and cut it open, but there just didn't seem like much of nothing was inside of it. I didn't eat it, but I did smell it though and it does smell like articokes. Makes a good green color in the cooking water. I wonder if that would be good to drink. Does anyone know? I also read that the flower petals were used as gum. Have you heard of this before? At eattheweeds.com there is a
video about eating thistles.

The guy says the buds are not
worth the effort nor the leaves
to cook, the stalks are the
easiest to prepare.
